Ingredients
1/2 stick of butter
1 yellow onion - coarsely chopped
2 cloves of garlic - minced
1 red bell pepper - julienned
1 orange bell pepper - julienned
1 pacakage of bratwurst
1 beer (IPA)
Buns (optional)
Ketchup/Mustard (optional)
Preparation
Bring grill temperature up to ~400 degrees F
Melt butter in cast iron skillet over direct heat, then sautee the onion until it starts to caramelize
Add two cloves of garlic, sautee for 2-3 minutes
Add bell peppers, sautee for 3-4 minutes
Add the bratwurst and beer. Simmer over direct heat for a few minutes. Flip the brats, continue to simmer for ~5 more minutes
Move the pan to indirect heat. Simmer for a while to cook down the beer, flip the brats once more
Once beer is mostly reduced, not completely, move the brats to the grill over direct heat for 2-3 minutes on each side. Return to the pan and they are ready to serve
