Ingredients
6-8 chicken thighs
Corn starch
Soda water
1-1/2 cups A.P. flour
1 cup panko bread crumbs
1 tablespoon baking powder
2 teaspoons salt
2 teaspoons black pepper
2 teaspoons paprika
2 teaspoons A.P. Rub
1 teaspoon garlic powder
Preparation
Setup for an indirect cook. Preheat the grill to 350 degrees Farenheit. Wait to put the grates in until just before the chicken goes on the grill
Put corn starch in a bowl
To make the breading, mix together the remaining ingredients in a second bowl
In a third bowl, pour the soda water
Dredged the chicken in the cornstarch, then dip the pieces in Club Soda. From the soda, roll them in the breading.
Put the chicken on the grill. Once they got a nice golden brown color, I flipped the pieces and continued cooking until they reached 175ºF internal.
